To make the pastry, add the sifted flour into a bowl with the salt and butter cut into pieces, then rub in the butter with your fingers, gradually pour water and form into a ball. Leave it to stand for at least 30 minutes. Roll out the pastry in the baking case. Peel the apples and slice them. Rub with lemon juice to stop them discoloring. Arrange the slices of apple on the pastry base and sprinkle with grated zest of orange and tablespoons of sugar. Decorate with crushed hazelnuts and almonds. Bake at 225°C for 30 minutes. Serve warm or cold with a little fresh cream.
